Over a custom cocktail, he talks with co-proprietor Ti Martin about the Garden District landmark and her mother, restaurateur Ella Brennan. Inspired, Dook offers twists on favorites: Trout Almondine with Parsnip Puree, Bananas Foster Bread Pudding, and a Classic Daiquiri.
